Japanese rice for sushi
Rice is everywhere in Japanese cuisine. Since it is the basic food of the diet, there are hundreds of varieties.
Sushi rice (sushimeshi / sumeshi) is the basis of every kind of sushi and the key ingredient to prepare a good sushi. It is a short-grain white rice mixed with a condiment (sushizu) consisting of rice vinegar, sugar, salt, kombu seaweed and sometimes mirin or Japanese sake. This kind of vinegar, with a light and delicate taste, gives the rice its aroma and stickiness.
The quality of the rice is very important, so it is used a Japanese kind of rice, the shari, which assures an optimal cohesion of the grains, neither too dry nor too sticky.
